Bananas in coconut milk

Bananas in coconut milk is a popular Thai dessert that is ridiculously simple to prepare. It is made of both sweet and salty components. Serving sweet dishes like this banana in coconut milk as a dessert at the end of a meal is common, but enjoyed as a snack between meals as well.

Ingredients

  • 500 ml coconut milk

  • 300 ml coconut water, you could use water instead.

  • 70 g white sugar

  • 70 g palm sugar

  • 1 tsp sea salt

  • 400 g medium ripe bananas

  • 200 g bite size pieces young coconut meat, optional

  • pandan leaves, optional

PREP TIME : 10 minutes

COOKING TIME :  20minutes

directions

  1. Boil the bananas in boiling water for 10 minutes. (boiling the bananas makes the flesh firm and beautiful).

  2. Let the bananas cool, peel, and cut into quarters.

  3. Put coconut milk, coconut water, salt, sugar, palm sugar and pandan leaves in a pot over medium heat. When it boils, add the bananas and turn the heat down a little and simmer for 5-8 minutes or until bananas have softened slightly.

  4. Add the coconut meat, stir to combine, immediately remove from the heat. Serve warm or room temperature.

*Note*

In Thailand we use a variety of bananas called gluay nam wah. You could use  Cavendish bananas instead. Try to use bananas that are almost ripe but not too soft or overripe.
