Crispy Roti

“Crispy Roti” is thin strips of bread that has been deep fried in oil until a airy crispy golden brown, coated with a sauce that gives it a sweet yet slightly salty taste with a spring onion flavor.

Ingredients

Ingredients for the dough

  • purpose flour 480 g

  • salt ¼ tsp

  • sugar 1tbsp

  • melted salted butter 30 g

  • 1 egg

  • oil 2 tbsp

  • clear limestone water 2 tbsp

  • water 100 ml

  • oil 1,000 ml ( for fry the dough)

Ingredients for the sugar coating

  • Sugar 270 g

  • water 180 ml

  • salt ¼ tsp

  • salted butter 10 g

  • 2 spring onions

Prepare

spring onions → sliced finely

salted butter→ melt the butter

limestone→ Soak in water to dissolve and let it to precipitate.

PREP TIME : 1 hr 30 minutes

COOKING TIME : 30 minutes

YIELD : 10 people

  1. In a large mixing bowl add all purpose flour, salt and sugar now combine by hand now add melted salted butter and eggs continue to mix, now add oil, clear limestone water and water and mix in until it forms a dough. Let the dough rest for 30 minutes after its been formed.

  2. Then divide the dough into 4 pieces, with each piece roll the dough until its flat then roll the dough longways like a tube then fold the dough and cut into 0.5 cm. pieces, now roll it again until it gets thin sprinkling flour on the board and the dough as you roll so it will not stick to the pin or board once done cut into small strips and continue until all the four pieces have been rolled and cut into strips. Place on a baking sheet and cover with baking paper.

  3. Now use a large pot and over medium heat add oil place your stripes into the oil and fry until golden brown, once the crispy roti is down frying place them in a wire strainer and let them cool for 5 minutes while waiting for the crispy roti to cool, we will make the sugar coating.

  4. In a pot add sugar, water, and salt cook over medium heat until the sugar dissolves and it starts to form thick bubbles now add salted butter and spring onions and stir together.

  5. Once finished while the roti is in the wire strainer grab a pastry brush and brush the sugar sauce on both sides of the roti until all the roti pieces that have been made are coated now place the roti in a dish and enjoy
