Thai Seafood Dipping Sauce

“Deep-fried pork ribs with sweet fish sauce” is deep-fried golden brown pork ribs coat with fish sauce, fried along with palm sugar that, gives it that fragrant and mellow flavor, added with the aroma and crunchiness of fried garlic.

Ingredients

  • 1000 g pork ribs

  • 4 tbsp palm sugar

  • 4 tbsp fish sauce

  • 3 tbsp water

  • 60 g chopped garlic

  • 1000 ml cooking oil

PREP TIME : 10 minutes

COOKING TIME : 25 minutes

YIELD : 2 people

  1. Heat the oil in a frying pan over medium heat.

  2. Once the pan is hot add the pieces of pork ribs

  3. Use a spatula to stir the pork ribs to coat the ribs all over with the oil.

  4. While frying the pork ribs separate the garlic into clove,

  5. Then put it in a food processor until its finely chopped.

  6. Use a spatula to stir the pork ribs to ensure that the pork ribs heat evenly.

  7. Fry the pork ribs until golden brown or well cooked.

  8. Using a colander, scoop the pork ribs out of the oil and place them on a paper-covered container.

  9. Turn off the gas and add chopped garlic and fry until golden.

  10. Use a colander to scoop out the fried garlic from the oil and place it in a paper towel-covered container.

  11. Remove the oil from the pan and use the same pan over medium heat.

  12. When the pan is hot, add fish sauce, water and palm sugar and stir with a ladle and cook until the mixture boils and turn off the gas.

  13. Put the fried pork ribs in it and stir until the sauce coats the fried pork ribs evenly.

  14. Now add the fried garlic and mix well. Enjoy!!
