Five Spice With Pork Belly And Eggs

This is one of my childhood favorite dishes. Hard boiled eggs and tender pork belly are simmered in a sweet-salty five-spice broth.


600 g pork belly

4 cloves garlic

1/2 tsp black peppercorns

3 coriander roots

3 g  star anise

20 g cinnamon stick

1.5 g cardamom

1.5 g coriander seed

20 g dried galangal

2 tbsp dark soy sauce

2 tbsp light soy sauce

2 tbsp palm sugar

2 tsp sugar

2/3 tsp salt

2 tbsp vegetable oil

2,000 ml water

5 eggs


  1. Pork belly, cut into 3 cm. cubes

  2. Garlic, black peppercorns and coriander roots, pound to paste

  3. Star anise, cinnamon stick, cardamom, coriander seed and dried galangal, roasted until fragrant

  4. Eggs, boiled and peeled

PREP TIME : 20 minutes

COOKING TIME :1 hr 10 minutes

YIELD :  4 pieces

  1. Heat 2 tbsp of oil in a large pot over medium heat. Once the oil is hot add the pepper, coriander and garlic paste and stir fry until fragrant.

  2. Now add pork belly and stir fry the pork for a minute or so. Once the exterior turns white, pour in the water then add five spice, dark soy, light soy sauce, palm sugar, sugar, salt and boiled eggs and stir to combine. Simmer for 1 hour or until the pork belly is tender. Serve hot, with rice.
