Jaew Plara is a spicy and flavorful dipping sauce in the Northeastern Thai-style, often served with steamed or grilled fish and vegetables.
Ingredients
110 g bell pepper
25 g Thai red chili
55 g shallot or red onion
3 cloves garlic
75 g tomato
1/2 tbsp lime juice
3 tbsp+ 1 tsp fermented fish sauce (Plara liquid)
1/2 tsp sugar
1+ 1/2 tbsp fish sauce
1 stalk coriander
Prepare
Bell peppers and Thai red chilies, stem removed.
Shallots and garlic, peeled and cut into small pieces.
Coriander, finely chopped.
PREP TIME : 5minutes

Place bell peppers, Thai red chilies, shallots, garlic and tomatoes in a frying pan, add a little water and stir until the water dries up. Continue stirring until you begin to see burn marks on the peppers, then turn off the stove.
Place the bell peppers, Thai red chilies, garlic and shallots in a mortar, then pound thoroughly. Then put the tomatoes into it and gently and carefully pound until well combined. Then season with lime juice, fermented fish sauce (Plara liquid), sugar, fish sauce, use a spoon to stir well, then scoop into a cup and sprinkle with coriander. Set aside until ready to serve
