Khao Tom Mat

“Khao Tom Mat (sticky rice, shredded coconut, black bean with banana filling)”Soft sticky rice black bean and shredded coconut with chewy bananas filling. Sweetness from bananas and sugar and has a slightly salty taste from the salt. It’s the perfect taste. you can eat as Appetizers, appetizers, desserts, or main meals are available. I’m sure vegans will fall in love with this dish.

Ingredients

  • sticky rice 300 g

  • shredded coconut 100 g

  • black bean 50 g

  • 10 bananas

  • sugar 50 g

  • salt 1 tsp

Prepare

Banana leaves → Banana leaves are dried in the sun for at least 30 minutes. then cut it
Outer banana leaf width 7.5 inches * length 9 inches.
Inner banana leaf width 6 inches * length 8 inches.

Bamboo strips → bamboo is cut into strips.

Black beans → soaked in water for at least 8 hours.

Coconut → shredded coconut into strips.

Sticky rice → wash thoroughly until the water is clear.

Banana → peeled and cut in half.

PREP TIME : 9 hr

COOKING TIME : 1 hr 30 minutes

YIELD : 5 people

  1. In a large mixing bowl add sticky rice shredded coconut, black bean, sugar and salt, stir to combine.

  2. Wrapped in banana leaves
    Lay two banana leaves one on top of the other in a cross pattern then put the sliced banana in the center of the banana leaves. Then put the coconut sticky rice and black bean stuffing on top of the banana. Once you finish grab both ends of the banana leaf and bring together, then roll the top of the banana leaf inward’s and take the bottom of the wrap and fold it upward to keep the bottom of the stuffing from falling out then roll the sides of the bottom inward to make it tighter, then take the top of the wrap and fold it down on to the bottom of the wrap and repeat the process and fold the sides inward to make the wrap tight. Once finished lay the wrap on the table with the folded ends on the table. Repeat this process and make a second wrap once finished take a piece of straw and wrap both banana wraps together at both ends.

  3. In the pot, put the banana wraps a bowl, pour the water over it, make sure the banana wraps is drowning and cover the lid. Then place on high heat and boil for at least 1 hour. During the boiling be sure to check that the water in the pot is not too low. If the water is low, you have to add the water.

  4. Turn off the stove and lift it off the stove. Remove the banana wraps (now you can call Khao Tom Mat) from the hot water and place it in a bowl of room temperature water. Leave to let the Khao Tom Mat cool. Then take it out of the bowl of water and you’re done.
