To prepare the corn: Cook the corn in a large steamer for 10 minutes or until cooked well. then remove the corn from the steamer and let them cool. When the corn is cool, cut the kernels off the cob, cutting close to the cob.(To make sure the corn is cooked, use a toothpick to poke the corn kernels, the cooked corn should be soft.)
To prepare the carrots: You can grate them on the large holes of a box grater, or use short strokes with a julienne peeler, or process them in a food processor fitted with a grating attachment.
To prepare the tomatoes: Cut in half
To prepare the long bean: Cut into 1 1/2″ lengths
To prepare the shrimp: With the shrimp remove the head and peel and remove the legs, shell and vein. Then put the shrimp into a pot of boiling water until it turns orange. Use a colander to scoop the shrimp from the hot water into a bowl of ice and water. Soak the shrimp in cool water for about 2 minutes or until the heat is gone. Then take the shrimp from cool water to a bowl.
*Tips* Soaking shrimp in water and ice after boiling will make the shrimp bounce.
