Shrimp Fried Rice

Rice is a staple food in Thailand. Thai people eat rice at every meal, and shrimp fried rice is a simple dish that pairs well with Thai kitchens. It can be made to taste delicious with just a few ingredients


  • 700 g steamed Thai Jasmine rice

  • 15 pieces of shrimp

  • 3 eggs

  • 5 tbsp of cooking oil

  • 1 tsp of salt

  • 1 ½ of light soy sauce

  • 3 tsp of sugar

  • 4 cloves of garlic

  • 3 spring onions

*Note* Prepare the steamed rice the day before store in the fridge overnight, this will make the rice taste better and not soggy


  1. Steam the Thai jasmine Rice the day before store in the fridge overnight

  2. with the shrimp remove the head and keep it for the stir fry then peel and remove the legs, shell and vain

  3. beat the eggs

  4. peel and chop the garlic

  5. finely slice the spring onions

PREP TIME : 20 minutes

COOKING TIME : 20 minutes

YIELD : 3 people



  1. In a large pan over medium heat add 3 tbsp of cooking oil , then add the shrimp heads stir fry until the shrimp heads are cooked and the oil turns orange.

  2. Then remove the shrimp heads and then add the chopped garlic, stir fry until you can smell the aroma from the garlic, and it slightly turns yellow. Transfer the stir-fried oil with garlic into a small cup.

  3. Using the same pan over medium heat add 2 tbsp of cooking oil add the pre-beaten eggs  and stir fry until cooked move the eggs over to one side of the pan add the shrimp head and garlic oil to the pan then add the shrimp stir-fry until cooked and mix the eggs and shrimp together, now add the steamed rice, sugar, salt, and light soy sauce and cook all together and stir and combine well. 

  4. Use a ladle to remove the shrimp fried rice to a dish and sprinkle the spring onions over the top and enjoy.

  • Recommended to squeeze lime and eat with cucumber
