Spicy Chicken Thai Salad (lab kai yang)

“Spicy chicken Thai salad (lab kai yang) or is called Nam Tok Kai” is a local food in the North and Isan region of Thailand. When you chew the Spicy chicken Thai salad, you will feel the juiciness of the chicken the freshness of Thai herbs and the aroma of roasted ground sticky rice and lime juice. What a perfect combine.

Ingredients

Ingredients for the chicken marinade

  • 300 g chicken thighs 

  • 1tbsp Oyster sauce

  • 1tbsp light soy sauce

  •  1tsp sugar

Ingredients for the salad

  • 1tsp chili powder

  • 2tsp roasted ground sticky rice

  • 7 chilies

  • 1 spring onion

  • 1 coriander

  • 1tsp lime juice

  • 1tsp fish sauce

  • 1 half of a red onion

  • 1 cilantro

Prepare

chicken thighs

Deboned chicken thighs place them in a mixing bowl and add the oyster sauce, light soy sauce and the sugar. Use your hand and mix together until the chicken is coated. Then let them rest for at least 15 minutes.

Thai herbs

Take the spring onion, coriander and cilantro and cut into fine slices, finally dice the red onions into small pieces.

PREP TIME : 20 minutes

COOKING TIME : 20 minutes

YIELD : 2 people

  1. take a pan and lightly coat the pan with oil, place the marinated chicken thighs into the pan, cook on each side until golden brown.

  2. Once browned remove the thighs from the pan and place the thighs on a cutting board and cut into bite size pieces. place the thighs back into the pan and add water and cook for two more minutes

  3. Then transfer them to a mixing bowl add chili powder, the roasted ground sticky rice, fish sauce and lime juice. stir with a spoon and mix everything until its fully coated.

  4. Then add the sliced spring onions, coriander, cilantro, and red onions stir and mix well and your done.
