Stir-fried angled gourd

Stir-fried angled gourd is an easy and quick dish that is also packed with nutritional value, suitable for all ages.

Ingredients

  • 300 g angled gourd (You can use zucchini as a substitute.)

  • 250 g minced pork

  • 3 eggs

  • 3 cloves garlic

  • 1 ½ tbsp light soy sauce

  • 1 tsp sugar

  • 1 tbsp oyster sauce

  • 2 tbsp vegetable oil (1) 

  • 2 tbsp vegetable oil (2)

Prepare

  1. finely chopped garlic.

  2. peeled and sliced angled gourd bite size pieces.

PREP TIME : 5minutes

COOKING TIME :  10 minutes

Stir-fried angled gourd

  1. Place the pan on the stove with medium heat and add vegetable oil (1). Once the oil is hot, crack the egg into the pan. Whisk the beaten red egg with the white egg and continuously stir-fry until the eggs are cooked. Then, scoop them out and set them aside in a container.

  2. Pour the oil (2) into the same pan and heat it up. Add finely chopped garlic and stir-fry until fragrant. Then, add the minced pork and stir-fry for about 1-2 minutes or until the pork is about 50% cooked. Then, add light soy sauce, sugar, oyster sauce, and stir-fry until well combined. Now, you can add the angled gourd and stir to combine. Close the lid of the pan for about 2-3 minutes or until the angled gourd becomes soft. After that, add scrambled egg and stir-fry until they are well combined.

  3. Serve it on a plate along with steaming hot jasmine rice, and they complement each other perfectly.
