Tom Som Kai soup is a delicious sour soup from northeast Thailand. “Tom” means boiling, “Som” means sour and “Kai” means chicken. When eaten, the chicken soup will make you feel warm and fresh from Thai herbs.
Ingredients
700 g Chicken leg quarter
1,200 ml water
2 Large cloves of garlic
50 g Shallot
3 Pieces of cut lemongrass
8 Pieces of slides galangal
1 Piece of large coriander root
90 g Tomato
15 g coriander
15 g spring onion
1 tsp Salt
1 tsp Sugar
2 tbsp Fish sauce
2 tbsp Tamarind concentrate
4 Pieces of chili
Prepare
Chicken leg quarter, cut into pieces
Shallot and garlic, peel and smashed
Coriander root, wash and smashed
Lemongrass, smashed and cut into 2” long
Sliced Galangal
Tomato, cut into 4 pieces
Chili, sliced in half
Coriander and spring onion cut into 2” long

COOKING TIME : 30minutes

Heat the water in a wok over medium heat.
Once the water is boiling add coriander root, galangal, lemongrass, garlic and shallot and cook for 2 minutes.
Add chicken leg quarter then use a ladle to press lightly to cover the chicken with water and cook until the water boils again. Skim any foam or fat from the soup with a ladle as necessary.
Once the soup is boiling add salt, sugar, fish sauce, and tamarind concentrate then stir to combine and simmer for another 15-20 minutes
Now add tomato, coriander, spring onion and red chili and stir to combine for another minute. Transfer to a big serving bowl. Enjoy!!
