Thai style fried chicken wings

Thai style fried chicken wings, chicken wings marinated with coriander root, garlic and pepper and fried without flour. When eaten the chicken wings are juicy on the inside and give an aroma of coriander root, garlic and pepper.

Ingredients

  • 650 g Chicken wings

  • 1 tbsp Garlic (for marinade)

  • 1 tbsp Coriander root

  • ½ tsp Peppercorn

  • 1 tsp Sugar

  • 1 tbsp Light soy sauce

  • 1 tbsp Oyster sauce

  • ½ tsp Fish sauce

  • 500 ml Cooking oil

  • 50 g Garlic (to fry)

Prepare

  1. Garlic and coriander root cut into small pieces. (for the marinade)

  2. Coarsely pound the garlic. (to fry)

PREP TIME : 30minutes

COOKING TIME :  15minutes

YIELD :  2 people

  1. To make the marinade, use a mortar and pestle to pound the coriander root, garlic and peppercorn to a rough paste.

  2. Place the chicken wings in a mixing bowl. Scoop the paste over the chicken wings and add sugar, light soy sauce, fish sauce and oyster sauce then use your hands to mix all the ingredients together. Cover the mixing bowl with plastic wrap and place in the fridge at least 15 minutes to marinate.

  3. Pour enough extra oil into a large wok to come one-third of the way up the side. Heat over medium heat. Take the bowl of marinated chicken wings from the fridge and stir for a second. Once the wok is hot carefully place the marinated chicken wings into the wok and cook until a light golden color. Now add the pounded garlic and cook until the chicken wings are a deep golden brown and cooked through and the pounded garlic are golden color. Drain on a paper towel.

  4. Serve with spicy tamarind dipping sauce.
