Garlic And Pepper Squid

Squid stir fried with garlic and pepper. It is delicious when eaten with Thai seafood dipping sauce.

Ingredients

  • Squid 300 g

  • Garlic 80 g

  • Pepper 1 tsp

  • 2 Corianders

  • Fish sauce 1  tsp

  • Soy sauce 1 tbsp

  • Oyster sauce 1 tbsp

  • Sugar 2 tsp

  • Vegetable oil 250

  • Water

  • Ice

Prepare

squid

Squid, guts removed, tentacles removed. use only squid body. Remove the black squid skin. (For beautiful colors) wash the squid. Cut off the tail fin then cut into pieces, about 2-3 cm each (when the squid is heated, the squid will shrink smaller)

pepper

Pound the pepper thoroughly.

garlic

peeled garlic and then pounded coarsely. Divided into two parts.

The first part 1/3 of the whole garlic Used for stir-frying and making sauces.

The second part 2/3 of the whole garlic Used for making fried garlic.

cilantro

Coriander cleaned, cut off the root and sliced about 0.5 cm in length.

PREP TIME : 20 minutes

COOKING TIME : 30 minutes

YIELD : 2 people

 

directions

  1. Heat the cooking oil in a frying pan over medium-heat. Add the minced garlic and cook until it starts to turn color (the garlic will continue cooking as it sits, so be sure to remove it from the heat before the garlic is golden brown). Use a sieve to drain the garlic and transfer to the paper towel to drain.

  2. Put ice and water in a large bowl

  3. In a pan over high heat. Pour the water into it, once the water is hot add the squid into it, cook for about 1-2 minutes, transfer the squid from the hot water to the ice baht prepared. (to make the squid crispy and not shrink)

  4.  Add 2 tbsp of garlic oil into the pan over medium heat. Add pounded garlic and pepper. Stir-fry until fragrant. 

  5. Add soy sauce, fish sauce, oyster sauce and sugar, stir until all the ingredients are mixed together. 

  6. Use a colander to scoop the squid out of the cold water. Put the squid in the pan stir fry until the sauce is coated with squid all over. Turn off the stove

  7. Put Fried squid with garlic and pepper on a plate. garnish them with fried garlic and coriander and you’re done.
