Deep fried shrimp with tamarind sauce

Deep fried shrimp with tamarind sauce is a dish for everyone. With a sweet and sour sauce and the light aroma of fish sauce goes well together when eaten with fried shrimp and fried shallots.

Ingredients

  • 10 pieces of shrimp

  • 30 g shallot

  • 5 pieces of dried chili (optional)

  • A pinch of salt

  • 1 tbsp water

  • 1 tbsp tempura flour

  • 50 g tempura flour

  • Vegetable oil (for frying)

     The sauce 

  • 30 ml fish sauce

  • 60 ml tamarind concentrate

  • 120 g palm sugar

Prepare

  1. Peeled and deveined shrimp.

  2. Shallot, thinly sliced

PREP TIME : 10minutes

COOKING TIME :  15minutes

YIELD :  1 person

directions

  1. With a bowl of shrimp add a pinch of salt, 1 tbsp tempura flour and 1 tbsp of water then use your hand to gently mix all the ingredients and sit aside.

  2. Pour enough extra oil into a large pan to come one-third of the way up the side and heat over medium heat. Now place 50g of tempura flour in a large tray or bowl. Add the shrimp and use your hands to roll over the shrimp and flour together to form a coating and shake excess flour from the shrimp (do it one at a time).

  3. Then deep fry in the hot oil until golden and crispy. Remove the shrimp from the oil and drain in a colander or kitchen paper. With the same pan add the shallot and cook until golden and crispy. Remove the shallot from the oil and drain in a colander or  kitchen paper. Now turn off the stove then add the dried chilies and cook until the dried chilies begin to darken. Remove the dried chilies from the oil and drain in a colander or kitchen paper.

  4. In a small pot add  fish sauce, tamarind concentrate and palm sugar and put it on medium heat. Keep stirring until the sugar dissolves and the sauce has bigger bubbles. Transfer from the stove  and let it cool.

  5. Arrange the shrimp on a plate and pour the sauce over the fried shrimp. Sprinkle with fried shallots and fried dried chili. Garnish with coriander leaves. Enjoy!!!
