Phad cha moo

Stir fried spicy pork with Thai herb (Phad cha moo) is a stir-fried dish with a mellow and spicy flavor from the pepper and herbs. Served with steamed rice and fried eggs, it will make your day a wonderful one.

Ingredients

  • 500 g pork

  • 3 Tbsp vegetable oil

  • 2 Tbsp fish sauce

  • 1 Tbsp light soy sauce

  • 1 Tbsp oyster sauce

  • 2 Tsp sugar

  • Chili as much as you prefer liking

  • 3 cloves garlic 

  • 30 g fingerroot

  • 20 g fresh peppercorn

  • A handful Thai basil

  • 4 kaffir lime leaves

  • Steamed Jasmine rice and fried egg for serving

Prepare

  1. Pork, sliced into small bite sized pieces. 

  2. Chili and garlic, pound it well

  3. Thai basil, pluck the basil leaves off the stems.

  4. Kaffir lime leaves, tear the rib from fresh leaves and crush the leaves a little.

  5. Finger root, thin julienne

PREP TIME : 10minutes

COOKING TIME :  10minutes

YIELD :  4 people

directions

  1. Heat the oil in a frying pan over medium heat. Once the pan is hot add the pounded chili and garlic and stir-fry until fragrant.

  2. Now add the small bite sized pieces of pork and stir-fry until the small bite sized pieces of pork is almost done. Then add the fish sauce, light soy sauce, sugar and oyster sauce and cook until the small bite sized pieces of pork is well done. Then add finger root, fresh peppercorn, Thai basil and kaffir lime leaves and stir-fry for another second.

  3. Transfer from the heat and serve with steamed rice and fried egg.
