Stir fried tomatoes and eggs

Stir fried tomatoes and eggs is a simple yet delicious dish. This satisfying dish combines tomatoes and soft scrambled eggs in a sweet and sour sauce. Served alongside a bowl of steamed rice, This tomato egg is the ultimate comfort meal for any occasion.


  • 2 tbsp vegetable oil (for making scrambled eggs)

  • 3 tbsp vegetable oil ( for stir frying with tomatoes)

  • 4 large eggs

  • 2 cloves garlic 

  • 1 tbsp green onion chopped

  • 4 medium-sized tomatoes 

  • 1 tbsp oyster sauce 

  • 1 1/2 tbsp light soy sauce

  • 1 tsp sugar


  1. Tomatoes, boil for 7-10 minutes, then soak in room temperature water until the tomatoes cool, then peel and cut into 8 wedges.

  2. Eggs, beat the eggs with an egg whisk or fork.

  3. Spring onion, thinly sliced

  4. garlic, finely chopped

PREP TIME : 10minutes

COOKING TIME :  10minutes

YIELD :  2 people


Stir fried tomatoes and eggs


  1. Pour 2 tablespoons of vegetable oil in a medium non-stick pan over medium-low heat.

  2. When the vegetable oil begins to warm, pour in the eggs and immediately use a spatula to swirl around the pan, without stopping, until the eggs look slightly thickened and very small curds begin to form, until almost done.

  3. Then transfer the scrambled eggs  from the pan to a container and sit aside.

  4. Add 3 tablespoons of vegetable oil into the wok. Add garlic and cook until fragrant, about 15 seconds.

  5. Add boiled tomatoes and stir for another minute. Then add light soy sauce, sugar and oyster sauce. Then stir and gently press the tomatoes into the bottom of the pan and cook until the tomatoes have softened, about 1-2 minutes.

  6. Pour in the scrambled eggs and stir to combine. Garnish with green onions, and enjoy!
